Cranberry Curd Parfait is the perfect light dessert for all occasions. It also doubles up as breakfast!

Cranberry Curd Parfait

How’s the new year coming along guys? Any new year resolutions? I didn’t really made any. When I was little, I used to have a long list of resolutions every year. I used to be so excited for the new year and would write down all the resolutions in my small diary. That used to last till 20th January at the max! Now I don’t bother, simply because I can never keep up with them.

However one thing which I follow religiously on the 1st day of every year is to eat dessert. My mom always said that whatever we do on the first 1st day of the year, we do the same for the rest of the year as well. So now you know why I eat desserts on 1st January! YES! ❤ This year I wanted to make something light and nice to celebrate the beginning of 2016. A dessert which could also double up as a breakfast and so I made this Cranberry Curd Parfait. This parfait has shortbread cookies at the bottom and then layered with cranberry curd.

Since cranberries are still in season, I decided to make these cranberry curd parfaits. These are really simple to make, all you need to make is the cranberry curd and then just layer everything together. Don’t you just love the gorgeous red color of the cranberry curd? What I love about this recipe is that you can have it for dessert as well as for breakfast and common who doesn’t love dessert for breakfast?!! I really had fun making & eating these and I hope you guys enjoy them as much as we did!

Method

Combine fresh cranberries, 1/3 cup water and lemon juice in a pan. Place this pan on medium heat.

Cook on medium heat for 6-7 minutes or until the cranberries start popping up. They will be nice and soft at this point, I also mashed some with the back of the spoon.

Transfer this mixture to a blender, add 1-2 tablespoons of water and blend to a smooth paste. Pass the mixture through a strainer to get rid of any larger particles. What you now have is smooth cranberry puree. Set aside.

Using the paddle attachment of your stand mixer or using your hand mixer, beat butter and sugar till well combined.

Add egg and the egg yolks and mix till well combined.

Now add the prepared cranberry puree, cornstarch and mix till the mixture looks smooth.Cranberry-Curd-Parfait-Recipe-Step-2

Transfer this mixture to a pan on medium heat.

Keep stirring the mixture till it thickens. This will take around 8-10 minutes. If you have a candy thermometer, the mixture thickens around 160-165 F.

Transfer the curd to a clean bowl. Let it stand for 5-10 minutes at room temperature and then cover it tightly with a cling. Make sure that the cling touches the surface of the curd, this will prevent skin formation on top. Refrigerate for 3-4 hours.Cranberry-Curd-Parfait-Recipe-Step-3

To assemble the parfait, break the shortbread cookies and place them at the bottom of the serving glasses. I broke the cookies into bigger chunks.

Top this with the prepared cranberry curd.

And finally add granola on top.

Garnish with some whipped cream and enjoy!

Cranberry Curd Parfait Recipe

* The recipe of cranberry curd makes around 2 cups of curd. For the parfait you would need only 1 cup if you are making it for 2 like I did. Use the remaining curd in whatever way you like, it’s great on toast, scones etc.

* You can increase the amount of sugar to 1 cup if you prefer a sweeter curd. Because I added the cookies and granola to the parfait, I kept the sugar in the curd to 3/4 cup. If I was going to eat it as such, I would have gone for 1 cup, so adjust accordingly.

Ingredients 

Cranberry curd

  • 12 oz cranberries

  • 1 cup cranberry curd
  • 1/2 cup granola of choice
  • 3-4 shortbread cookies
  • whipped cream to garnish (optional)
